This weekend was HOT! It was around 90 degrees both days, which called for some mexican food, pool time, and a whole lot of sun screen. Ben (my boyfriend) was in town visiting so we made Friday our taco date night complete with homemade margaritas!
Actually, we made chalupas, which are just regular crunchy tacos slipped inside tortillas filled with refried beans. It’s our unspoken agreement that when we say it’s taco night, it’s actually chalupa night. We used ground turkey instead of ground beef and a homemade taco seasoning (recipe from Budget Bytes — LOVE this site). We topped them with homemade pico de gallo, homemade salsa, and avocados. I actually forgot to buy cheese, an essential part of any mexican dish (even though I’m not supposed to be eating dairy — oops), but we didn’t even miss it with all of the other toppings.
1 1/2 oz Tequila
1/2 oz Triple sec
1 oz Rose’s lime juice
I feel like homemade drinks are never as good as the ones you get at a bar, but in this instance, boy was I was wrong. These margaritas were super easy to make and absolutely delicious.
It was pretty hot out so we waited until the sun went down and hung out by the pool for a bit. Sitting outside on warm summer evenings as it starts to cool down is my absolute favorite part of summer, perfect for the summer solstice.
It was already super crowded when we went out to watch the Pride parade around noon. A few of our friends were marching in it so we wanted to get good spots, plus it was ridiculously hot so shade was essential!
There were tons of great floats. It was an awesome exerpeince. I’ll be honest, I teared up a few times because it just made me so happy to see so much love and acceptance. It was really great to be a part of this celebration.
My favorite float was sponsored by Chipotle. It had a guy riding a mechanical burrito like a bull. Their slogan: “So big you can ride it!” Hah!
We hung out in the park for a bit but ended up heading home pretty early in the day and sitting out by the pool to get some sun.
Sunday, we went and saw This Is The End, the movie with all of the actors playing themselves during the end of the world. It was… okay. I wish they would have done some things differently, but overall it was still pretty funny. Michael Cera totally stole the show for the first twenty minutes.
